Urban bee-keeping is a well established yet little-known activity in the city. Perhaps the largest collection of hives is the “bee hotel” at Toronto’s Fairmont Royal York among the rooftop gardens, where the hives produce an astounding 360 kilograms of honey in a year. Participants in this 10:00am installment of the Textile Museum of Canada’s Conscious Consumption series will visit the hives in the city’s centre, learning about honey as a sustainable food source, urban green space, and how healthy bee populations are a barometer of environmental pollution.
