BOTI Interiors designs relaunch of Calgary’s Hy’s Steakhouse & Cocktail Bar
For almost 60 years Hy’s Steakhouse has stood the test of time, renowned as Canada’s long-established premier steakhouse. Hy’s was founded by Hy Aisenstat in 1955, and today is owned and operated by his sons, Neil and John Aisenstat, and their partner, Rob Macdonald. Hy’s of Canada is truly a national brand, operating Hy’s Steakhouse in six locations across the country, and Gotham Steakhouse & Cocktail Bar in Vancouver.
Back in the 1950s, Calgary’s restaurant landscape was just beginning to take shape and Hy Aisenstat recognized a window of opportunity, founding the very first Hy’s Steakhouse in 1955. Hy’s 4th Avenue location closed in December 2006 to make way for Jamieson Place, and a new 10,200-square-foot space in the CORE luxury shopping centre was finally secured. And now, after an almost eight-year hiatus, Hy’s will open its newest location in the centre of the city’s vibrant business and shopping district.
Interior designer Elaine Thorsell of Vancouver’s BOTI has stayed true to the essence of a classic steakhouse, choosing dark mahogany, deep burgundy leather, antique brass accents and carefully curated original art to frame the room. The horseshoe-shaped bar, highlighted by custom light fixtures and a warm granite bar top, is situated just off-centre and is visible from both the 8th Avenue and CORE entrances. Two semi-private library rooms, accessed through disappearing pocket doors clad in leather and brass, showcase custom millwork and extensive wine display cabinets, while the exclusive Alberta Room is highlighted by travertine stone walls.
The open kitchen allows full view of the culinary team at work and is punctuated by a showpiece charcoal grill, beautifully reimagined and updated in its own custom glass surround, stationed with pride of place in the dining room. A History Wall, literally a timeline of the company’s story over the last nearly 60 years, is sure to bring back fond memories for returning guests, and to be a fascinating feature for those new to Hy’s. With respect for heritage and tradition updated with modern accents, and no detail overlooked, Hy’s Calgary is back to stay.
